Why is the word “resume” sometimes written as “résumé” ?

Why do we use those fancy characters in words like “résumé” or “fiancé” or “antré” ?
And I have another question about the word “center.” Is it CENTER or CENTRE ? What’s the difference?
IF it’s OK to misspell “center” as “centre,” then is it okay to misspell other words too? For example:
“monster” becomes “monstre”
“liter” becomes “litre”
“computer” becomes “computre”
